Preparation : 18 min
Cut the croissant in half down the middle.
Arrange the croissant upright, point upwards, on a baking tray.
Bake for 17 minutes at 170°C.
Dressing : 3 min
When cool, sprinkle with icing sugar.
Make the royal icing by whisking the egg whites, sugar and lemon juice until they are firm yet supple.
Use immediately, forming strands around the croissant.
Sprinkle with coloured, gold or silver sugar balls, or pomegranate seeds.
