Recipe
Vary the pleasures discovering these three smorrebrods recipes. Whether you are a dill fish lover, meat addict or vegetarian, there is one for all tastes.
Preparation : 15 min
FOR THE VEGETARIAN SANDWICH

PREPARING THE QUINOA
Cook the quinoa
Season with olive oil and lemon juice
Add salt and pepper
Add 1 tablespoon of pomegranate seeds

PREPARING THE AVOCADO
Peel and slice the avocado finely
Brush with lemon juice to prevent discoloration

PREPARING THE GRAPEFRUIT
Cut out six grapefruit segments

FOR THE SCANDINAVIAN SANDWICH

PREPARING THE PICKLED VEGETABLES
Thinly slice the carrots, beetroot, and radishes
Bring to the boil 1 dL of water, 100 g of caster sugar, and 1 dL of white vinegar, then pour over the sliced vegetables
Leave to marinate for at least one hour
Drain before use
Dressing : 5 min
FOR THE VEGETARIAN SANDWICH

1. Toast the bread
2. Spread the quinoa over the slice
3. Arrange the sliced avocado on top of the quinoa
4. Place grapefruit segments in between

FOR THE ENERGY SANDWICH

1. Drizzle olive oil and lemon juice over all the ingredients
2. Spread the date jam over the toasted bread
3. Sprinkle soybean sprouts over the slice
4. Cut the chicken into thin slices and arrange on top of the slice
5. Finish decorating the slice with sweetcorn, baby sweetcorn, and pumpkin seeds

FOR THE SCANDINAVIAN SANDWICH

1. Spread the wholegrain mustard over the toasted bread
2. Cut small pieces of the gravlax and arrange on top of the slice
3. Arrange the pickled vegetables on top, alternating the colours
4. Finish decorating by sprinkling with pink peppercorn powder
Chef's tip
For the vegetarian sandwich: To add a touch of acidity, mix passion fruit seeds into the quinoa

For the energy sandwich: For a fun twist, replace the sweetcorn with popcorn.

For the scandinavian sandwich: You can prepare this recipe using any type of smoked fish with lots of dill (typical of Scandinavian dishes).
