Turn yesterday's croissant into granola !

Here's a delicious, no-waste granola recipe perfect for hotels, restaurants and cafes.
It uses a combination of oats, nuts, seeds and dried fruit, so you can use whatever you have on stock. It's easy to prepare and can be served with yogurt, fresh fruit or as a topping for a smoothie bowl. It's a great way to reduce your food waste and offer your customers a healthy breakfast or snack.

Prepare the ingredients.

Cut the croissants into pieces and pour into the mixing bowl with the brown sugar and the oat flakes.
Mix with the leaf attachment until you obtain a sandy mixture.
Add the egg whites and continue mixing until you obtain a crumble-type texture.
Add the pecan nuts.
Pour onto a sheet of baking paper on a baking tray and spread out, ensuring that you have the same thickness everywhere, and bake for 18 minutes at 150°C.
Add the cranberries after baking.
Chef's tip
You can replace half the sugar with maple syrup.

You can replace the pecan nuts with almonds or hazelnuts, and the cranberries with sultanas, figs, or dried apricots.

You can also use this granola as a topping on yoghurts or compotes.
