Prepare the ingredients.
Dice the tomatoes, chop the basil leaves, and mix with the salt in a bowl, then leave to rest in the refrigerator for 20 minutes.
Cut the bread into 2 cm-thick slices, place in a dish, and bake for 5 minutes at 230°C.
Drain the diced tomato and basil (the salt will have disgorged it) and combine with the olive oil.
Rub the cloves of garlic on the toasted bread once cooled, and spread a layer of the tomato and basil mixture on top.
Add small, sliced cherry tomatoes, fresh basil, and a twist of pepper on top.
Chef's tip
For meat lovers, add cured ham/for fish lovers, add anchovies.
