Vary the pleasures discovering these three smorrebrods recipes. Whether you are a dill fish lover, meat addict or vegetarian, there is one for all tastes.

PREPARING THE QUINOA
Cook the quinoa
Season with olive oil and lemon juice
Add salt and pepper
Add 1 tablespoon of pomegranate seeds

PREPARING THE AVOCADO
Peel and slice the avocado finely
Brush with lemon juice to prevent discoloration

PREPARING THE GRAPEFRUIT
Cut out six grapefruit segments
Dressing : 5 min
1. Spread the wholegrain mustard over the toasted bread
2. Cut small pieces of the gravlax and arrange on top of the slice
3. Arrange the pickled vegetables on top, alternating the colours
4. Finish decorating by sprinkling with pink peppercorn powder
